Saccharomyces is a yeast commonly isolated from human, mammals, birds, wine, beer, fruits, trees, plants, olives, and soil. Also known as the "baker's" or "brewer's" yeast, Saccharomyces cerevisiae is used in food industry in production of various food stuffs, wines, and beers. 

Species

The genus Saccharomyces includes several species, the most well-known one being Saccharomyces cerevisiae. Saccharomyces boullardii, which is now used in treatment of intestinal disorders, such as antibiotic-associated diarrhea is considered to be a synonym for a particular strain of Saccharomyces cerevisiae.

Zygosaccharomyces kombuchaensis

The physiology of a new species related to the spoilage yeasts Zygosaccharomyces lentus and Zygosaccharomyces bailii

Zygosaccharomyces kombuchaensis was recently discovered in the 'tea fungus' used to make fermented tea. Z. kombuchaensis was shown by ribosomal DNA sequencing to be a novel species, and a close relative of Zygosaccharomyces lentus, from which it could not be distinguished by conventional physiological tests. Z. lentus was originally established as a new taxon by growth at 4°C, sensitivity for heat and oxidative stress, and lack of growth in aerobic shaken culture at temperatures above 25°C. Subsequent analysis of Z. kombuchaensis reveals that this species shares these unusual characteristics, confirming its close genealogical relationship to Z. lentus. Detailed physiological data from a number of Z. kombuchaensis and Z. lentus strains clearly demonstrate that these two species can in fact be distinguished from one another based on their differing resistance/sensitivity to the food preservatives benzoic acid and sorbic acid. The spoilage yeasts Zygosaccharomyces bailii and Z. lentus are resistant to both acetic acid and sorbic acid, whereas Z. kombuchaensis is resistant to acetic acid but sensitive to sorbic acid. This would indicate that Z. kombuchaensis strains lack the mechanism for resistance to sorbic acid, but possess the means of resistance to acetic acid. This observation would therefore suggest that these two resistance mechanisms are different, and that in all probability acetic and sorbic acids inhibit yeast growth by different modes of action. Z. kombuchaensis strains were also sensitive to benzoic acid, again suggesting inhibition dissimilar from that to acetic acid.

In western cultures, tea is most commonly prepared as a hot water infusion of black tea leaves. Black tea manufacture involves a process described as 'fermentation' following the plucking of tea leaves. This so-called 'fermentation' does not involve microbes, but action of enzymes derived from the tea-plant tissues. However there do exist many locally produced beverages where tea is genuinely fermented by microbial action, forming ethanol. The microbes involved are primarily acid-tolerant bacteria and yeasts.

The genomes of particular nonhuman organisms such as yeast have been studied for a number of reasons including the need to improve sequencing and analysis techniques. These nonhuman genomes also provide powerful sets of data against which to compare the human genome.

For example, a gene known to govern the rate of aging in yeast cells has been found to be active in mice, yielding a new insight into why mice and people age and, possibly, ways of enhancing life span.

The Saccharomyces cerevisiae (yeast) genome contains 12.1 million base pairs and is estimated to have 6,034 genes.

I vestlige kulturer tilberedes te oftest som en varmtvannsinfusjon av svarte teblader. Produksjon av svart te innebærer en prosess beskrevet som 'gjæring' etter plukking av teblad. Denne såkalte 'gjæringen' involverer ikke mikrober, men virkning av enzymer avledet fra teplantevevet. Imidlertid eksisterer det mange lokalt produserte drikkevarer der te virkelig fermenteres ved mikrobiell virkning og danner etanol. De involverte mikrober er hovedsakelig syretolerante bakterier og gjær.
